Ayrshire Milk

Evidence of the desirability of Ayrshire milk came to light in an intensive study in Britain which established that Ayrshire milk possessed superior or premium properties when compared to ordinary milk.

The Hannah Research Institute (HRI) was commissioned to establish the quality attributes of Ayrshire milk, looking at chemical and physical characteristics as well as organoleptic properties. The sensory profile of ten types of pasteurised drinking milk was determined by the HRI expert panel of eleven professional assessors. The characteristics assessed were creamy aroma, creamy flavour, sweet flavour, after taste and also body.

Ayrshire whole milk scored highest on all five criteria. The profile was repeated with semi-skimmed milk and once again the Ayrshire milk scored highest in all five sensory attributes. Of special significance was that the product clearly outperformed the current brand leaders in whole milk and semi-skimmed milk. Based on this study, the HRI concluded that Ayrshire milk, especially the full cream product, has a desirable flavour profile which complements the projected image of high quality. A further study was then undertaken by the specialist Cambridge Market Research (CMR) organisation. Forty-nine respondents who were regular purchasers and consumers of whole milk were used in a consumer evaluation of three selected milks including Ayrshire whole milk. Consistent with the expert panel’s sensory profiling, the consumer panel scored Ayrshire milk as number one in taste and it received top marks under "health or healthiness."
